New Chez Bubba bistro opens in Windwardside

Chez Bubba bistro in Windwardside officially opened on Saturday, at the location of the former Eden restaurant, writes the Daily Herald. The new French menu is made by Chef Johan de Jager, who was formerly working as sous-chef at Queen’s Gardens Resort. The menu is designed to cater to everyone’s taste with fish, meat and vegetarian dishes served.On the menu, items such as sautéed frog legs, escargots and shrimp cocktails can be found as well as coq au vin and vivaneau grillé.

De Jager studied French and Italian cooking at Gildevaart in Nieuwegein, the Netherlands. “I’m very excited to work with this new menu I’ve created. Right now, we’ll be open only for dinner, but as soon as the high-season starts again a lunch menu will be presented as well,” De Jager said. Owners of Queen’s Gardens Resort Hidde and Claire Verbeke are now also affiliated with Chez Bubba. “The setup of this bistro is to have an excellent and unique experience. As there are no restaurants on Saba with a French menu, this is something we felt we had to establish,” Hidde Verbeke said.

At Chez Bubba, there are also plenty of French wines to choose from ranging from a house wine to US $100 per bottle. Around a dozen guests were present for Saturday evening’s opening. “We deliberately had a quiet opening to get use to the new menu. We had an excellent night, and the guests were very pleased with the results,” new manager Menno Klap said afterwards. Klap is also a former Queen’s Gardens’ employee and studied Hotel and Restaurant Management in Bergen op Zoom, the Netherlands. Chef de Jager walked by the tables on Saturday evening to personally introduce himself and to get a feel of the responses to his menu. “The reactions were very positive and this stimulates me even more. I think I’ll be working here for quite a while,” said De Jager.

Plans for the redecorating of the establishment should be realised by the end of the year. A bar will be constructed next to the kitchen, and sheets will span above the seating area so guests can stay outside when it rains. WIFI for guests will be installed today, Monday, and a Facebook page will be created for Chef De Jager to post specials as well as upcoming events. In a few
months, they plan to invite a couple of guest chefs, who will cook for a night or two. One of them will be Hans van Triest, winner of the 2006 Caribbean Chef of the Year award.

Chez Bubba Bistro will be open daily, except Tuesdays, from 5:30 to 10:00pm.
